Onions have numerous varieties, but those that we grow and ship are mainly broken down into three main groups:  Yellows, Whites and Reds.  The yellow variety has a crisp paper skin, and is the most commonly seen onion at your neighborhood supermarket.  Yellow onions are available beginning in August, continuing into Spring of the next year.  Availability is usually excellent, depending on the market.  The white and red varieties are also popular, yet stocks on hand can be tight due to a higher cost associated with raising crops of good quality.  White and red varieties are harvested in late Summer and shipped out of the Northwest until late Spring of the next year.
